About the Recipe
We used ‘lite firm’ tofu which is not as hard as firm tofu or as soft as silken tofu but in between the two.
Ingredients
200g firm tofu, cut into 6 slices
10g sliced dried Shitake mushrooms, soaked in ½ cup boiling water
1 tablespoons ginger, cut into very thin matchsticks
2 tablespoons very thinly sliced capsicum
2 finely chopped spring onions
2 tablespoons rice bran oil
2 tablespoons apple cider vinegar
1 tablespoon natural sweetener
2 tablespoons soy sauce
2 teaspoons tapioca starch
200g Sesame cauliflower rice

200g cauliflower rice
2 tablespoons rice bran oil
1 teaspoon sesame oil
2 teaspoons black or white sesame seeds
Preparation
Step 1
Heat oil in large fry pan, and stir fry ginger, capsicum and spring onions until capsicum is beginning to soften.Â
Step 2
Add vinegar, sweetener and soy sauce.Â
Step 3
Add mushrooms, then stir tapioca into water and add to pan.
Step 4
Move vegetables to one side then add tofu, and allow to heat through.
Step 5
Serve with sesame cauliflower rice.
Sesame Cauliflower Rice
Step 1
Heat oils over medium heat, add cauliflower rice and stir fry until beginning to brown.
Step 2
Turn out and serve with sesame seeds sprinkled over the top.
